What you need to know about the Highfield Level 3 End-Point Assessment for Chef de Partie


Who is this standard for?

Chefs de partie may work in different types of organisations and employers such as restaurants, hotels, care homes/ hospitals, military establishments and cruise ships. A chef de partie will oversee and supervise team members with recieving, storing, preparing, cooking and finshing of a range of food items to support the kitchen in providing the culinary offer.

On this apprenticeship, learners will develop knowledge, skills and behaviours in areas such as: 

  • prepare cook and finish advanced dishes
  • technology 
  • health and safety  
  • supervision  
  • industry and food trends 
  • problem solving
  • teamwork
  • promotion, business growth and customers 
  • complex preparation, cooking and finishing

Programme structure

This is a level 3 apprenticeship standard that has a typical duration of 18 months.

Assessment Plan

Apprentices will be assessed against ST0227/AP05.

  • Professional discussion underpinned by a portfolio of evidence
